My favorite fruits to add to any form of dessert are strawberries. With this is was only a matter of time before I share my favorite strawberry filling for cake recipe.
A Strawberry filling for cake without cornstarch
For years I would make this recipe to include cornstarch but decided recently to omit the cornstarch and allow the recipe to simmer a little longer in order to thicken which produced the same amazing result except without the added constarch.
Homemade Strawberry Preserves
It is sort of like homemade strawberry preserves without all the extra canning steps. Simple, delicious, fruity and perfect as the filling . It is the recipe I use to make my vanilla cake with strawberry filling .
If you already know how to make strawberry preserves or frequently use a strawberry preserve recipes, you will notice that these ingredients are somewhat similar.
Strawberry Preserves vs Strawberry Jam
This is something I often wondered, what the difference is between strawberry preserves vs strawberry jam. The answer is?! Strawberry preserves has more chunks of fruit in a gel while strawberry jam is more of a puree fruit gel. For that reason, this recipe is more like a preserve than a jam
So whatever you need may be, this strawberry filling will work well to fill layer cakes, like I did here with my vanilla cake filled with strawberry preserves, cupcakes, or top a cheesecake.
This filling works really well as a filling for layer cakes because it thickens as it cooks and will not run. All you have to do is create a buttercream dam then frost and fill your cake as you usually would. Strawberry Filling For Cake
- 2 cups Fresh Strawberries, largely diced
- 3/4 cup Sugar
- 1/2 cup Water
- 1 tsp Lemon or Lime Juice
- Add strawberries, sugar and water to a saucepan and bring to a boil over medium high heat and use a potato masher to gently crush some of the diced strawberries.
- Reduced heat to medium low and allow mixture to simmer until it reduces to a third of where it started and coats the back of a spoon.
- Remove from heat and stir in lemon/lime juice. Allow to cool completely before use.
